Light Caesar Salad

Finally, a low-fat Caesar salad that doesn’t compromise on taste. Most Caesars can have up to 38 g of fat per serving. Epicure’s has only 2.5 g!
Ingredients
1 tbspCaesar Dressing Mix
1 tbsp light mayonnaise
1 tspMinced Garlic
1 1⁄2 tbsp lemon juice
2 tbsp low-fat milk
2 tbsp grated Parmesan cheese
Black Pepper, freshly ground, to taste
6 cups chopped Romaine lettuce
1⁄2 cupGarlic Croutons, or store bought
Preparation
- In a large mixing bowl using a Piano Wire Whisk, whisk first 6 ingredients. Season with Black Pepper.
- Add lettuce and toss to coat.
- Stir in Garlic Croutons and serve.
