Fajita Grilled Mini Pizzas

Serve with 1 1⁄2 cups leafy green salad with fresh lemon.
Ingredients
1⁄2 lb (225 g) extra lean ground beef or chicken
1 tbspFajita SeasoningorTaco Seasoning
4 naan, plain or garlic flavour
1 cup Greek yogurt
1⁄4 cupBalsamic Vinaigrette DressingorPesto Sauce, prepared
2 cups mixed cherry tomatoes, halved or quartered
1 cup shredded reduced-fat mozzarella
4 cups baby arugula or kale
Preparation
- Place beef and seasoning in a Multipurpose Steamer. Cover; microwave for 2 minutes on high. Using a fork, break up meat. Cover and microwave until cooked through, 2–3 more minutes. Drain and discard liquid.
OVEN PREPARATION:
- Preheat oven to 425° F (220° C).
- Arrange naan on 2 Sheet Pans. Spread yogurt overtop; drizzle with Balsamic Vinaigrette Dressing. Sprinkle beef, tomatoes, and cheese on top. Bake until edge is crisp and cheese melts, about 10 minutes.
- Top with arugula.
GRILL PREPARATION:
- Preheat grill to medium.
- Place naan on grill for 1 minute.
- Remove; spread grilled sides with yogurt, Balsamic Vinaigrette Dressing, beef, tomatoes, and cheese. Grill until edges are crisp and cheese melts, 2–3 minutes.
- Top with arugula.
