Black Bean & Corn Salsa

Use as a salsa to top nachos, dunk chips, or fill tacos! Be sodium savvy– when choosing canned black beans, opt for low-sodium and give them a quick rinse after you drain them. Rinsing helps remove even more of the sodium.

Ingredients
2 cups frozen corn kernels
2 cups canned black beans
2 tbsp olive oil
2 tbspPoco Picante Salsa, prepared
lime, optional
cilantro, optional
Preparation
- In a Rectangular Steamer, microwave corn on high, with lid on for 2 minutes.
- Combine corn with all other ingredients. Add a lively splash of lime juice and cilantro if desired. Serve warm or chilled.
