Need a rush job? Count on the microwave for this one dish flavour-buster that goes from microwave to table in about 15 min. Al Fresco on the fly!
Serve with 1 cup cooked grains.
1 medium sweet potato
2 tbsp olive oil, divided
1 lb (450 g) boneless, skinless chicken breasts
2 bell peppers
2 cups broccoli florets
- Chop sweet potato and place in Multipurpose Steamer. Coat with 1 tbsp each olive oil and seasoning. Cover and microwave on high 4 min.
- Meanwhile, place chicken breasts in a large bowl; coat with remaining oil and seasoning. Place on multipurpose tray and set aside. Chop peppers.
- Add peppers and broccoli to steamer; stir to combine. Top with chicken on tray. Cover and microwave on high until veggies are tender and chicken is cooked through, about 10 min.
- Carefully remove tray with chicken. Thickly slice chicken and serve with veggies.
