Couscous Salad

Ingredients
3 cups water
2 cups couscous
1 small English cucumber, diced
1 cup grated carrot
1 recipe preparedGreek Dressing
Preparation
- Boil water in Multipurpose Pot - 8 cup. Remove from heat and stir in couscous. Cover with lid and let steam 10 minutes. Remove lid, fluff with a fork and cool to room temperature.
- Stir cucumber, carrot, cooled couscous and Greek Dressing in a mixing bowl. Serve immediately or chill before serving.
